Eggs - a product without which no hostess can do.
Juicy omelet, pies, muffins, cakes, dessert creams - all these goodies are prepared using chicken or quail eggs, the freshness of which plays a crucial role in the quality of the finished dish.
And since the most popular product in the grocery market is perishable need to know its expiration date and closely monitor storage conditions The "secret ingredient" of any baking.
When buying a tray in a store, you need to consider that the manufacturer often indicates on the label packing date. How much time passed between the appearance of the product and its delivery to the counter remains unknown.
What is the shelf life of eggs?
Despite the impressive shelf life, experts do not recommend eating soft-boiled chicken eggs or in the form of an omelet after nine days from the date of production. Quail more secure thanks to lysozyme - a substance that prevents the growth of bacteria.
Freshly harvested eggs should be stored in a dry, dark place at a temperature of not higher than 10 degrees.
Outside the refrigerator, they will remain fresh for 2-3 weeksin the refrigerator at a temperature of 1-2 degrees will last 3-4 months.
If you preserve them in a lime mortar, which can be prepared independently, then they will serve about a yearbut the taste will change a little.
Extend the shelf life without changing the taste will help the usual vegetable oil and oats. At the bottom of the box you need to lay out oats, put eggs, buttered or greased, with a pointed end down and cover them with oats. Put the box must be in dry dark room.
Boiled eggs lose their protective film when exposed to hot water, which shortens their lifespan. up to three days at room temperature, and of the week in the refrigerator.
How many raw eggs are stored:
- First, to increase the shelf life recommended by GOST, they must be store in container - it will not let in excess moisture, light and protect against odors of other products.
- Secondly, eggs should be kept in cool and dry place
- Third, put them pointed end down.
- Fourth, immediately use cracked and chipped.
- Fifth, include refrigeration fan.
Under all conditions, raw chicken eggs will remain fresh. up to five weeks, and quail can serve two months.
If nessesary separate the white from the yolkthen individually they are stored differently. Protein can only be stored in the refrigerator, in a glass container and use within 4 days.
The yolk outside the shell dries out very quickly, so it will lose its freshness already In a few hours, but if you put it in a glass with cold water, it will be suitable even 1-2 days.
Storage: in the refrigerator or indoors? Usually, people do not ask this question and simply shift the store-bought trays into the container of the refrigerator. Storing eggs in the cold prolongs their freshness, but at the same time it dries and reduces the amount of nutrients.
British scientists from the Food Testing Laboratory conducted an experiment and found that the number of bacteria in the eggsStored without a refrigerator for two weeks, does not exceed the same figure in the product from the refrigerator. Therefore it is better go to the store more often and buy small packages that will be stored in room and longer remain nutritious and healthy.
How to check an egg for freshness?
Most easy way - place it in a glass of water at room temperature.
The food will fall to the bottom, and the rotten pop up.
Quail egg freshness can be determined by weight: unlike chicken, it doesn’t go out, but dries out even after the expiration date weighs like a feather.
But even if the eggs were bought in the store recently and judging by the marking, they still have a long time to live, split each into a separate bowlbefore sending to the dough or to the pan.
Rotten egg becomes dark and gets an unpleasant smell. And to secure yourself From buying a low-quality product in a store, you need to know a few features of fresh eggs:
- shell uniform color, no cracks,
- weight fits the size
- present on each marking,
- clean, without smell.
In many large stores near the egg counter is ovoscope - a device for the “lumen” of eggs, with the help of which one can literally see them from the inside - hidden cracks, dried yolk, blood inside, darkening. You can ask the consultant if they have such a device in their store or buy it. for personal use.

Return substandard purchase
If the visual inspection did not raise doubts about the quality of the goods, but at home it turned out that eggs lay on the counter, they can be returned or exchanged. Perhaps this is only if there is a check for the purchase, with which you need to return to the store and show the cashier grievance.
Eggs are a delicious and nutritious product, rich in useful protein and vitamins. But after the expiration date they become hazardous to healthThat is why it is so important to have information about the rules and terms of storage.
Knowledge of how to check purchase for freshnesshow to extend the shelf life and how to get a refund for low-quality goods will help to protect yourself and every day to please yourself and your family with tasty and hearty cakes, cakes with protein cream and even hair masks.

Fresh egg storage time
- People who keep their chickens in the courtyard, can make sure that raw eggs, even at room temperature, can lie down for about 20-25 days.
- But it is worth refraining from such experiments with a store or market product. After all, it is not known under what conditions and for how long the products of the poultry farm were stored before they hit the counter. Therefore, it is best to put them on the shelf of the refrigerator. And if this is not possible, use within one week.
- In the refrigerator (at a temperature of 0-5 degrees) chicken eggs can be stored without damage to themselves up to 3 months. But it should be noted that in warehouses and stores, this product sometimes has time to spend enough time before it waits for its buyer. Therefore, it should not be stored for more than a month even in the refrigerator.
- By the way, the use of cracked copies is best to give up. regardless of their freshness.
- Reasonable caution must also be exercised if there are other suspicious signs. - Yolk stuck to the shell, blotches of blood or an unusual color.
The storage time of boiled eggs
Boiled eggs - this is what people often take with them, going on a long trip. However, we must remember that the shelf life of this familiar to the travelers food is much less than we would like:
- They can even be stored in the fridge. only 1-1.5 weeks.
- And if the shell cracked during cooking, the shelf life is further reduced.
- At room temperature, the product should not be left longer than 2-3 days. The higher the temperature, the faster it will deteriorate.
Even in the refrigerator, boiled eggs can be stored for only 1-1.5 weeks.
Ways to check freshness
- The surest way to find out the freshness of a chicken egg is to dip it in water. Inside it, regardless of the degree of freshness, there is an air chamber. Over time, the amount of air under the shell gradually increases: it penetrates there through microscopic pores.
Buoyancy changes accordingly:
- If the egg is lowered to the bottom of the water tank, it means that there is still little air. This indicates freshness.
- If it fell on the bottom vertically - the air is longer, that is, the shelf life is running out. Without heat treatment, this product is better not to use.
- And if it didn’t drown at all, but it floats on the surface, it means that it has hopelessly deteriorated, so you shouldn’t eat it.
Determination of egg freshness
Egg storage conditions
As many know from personal experience, a fresh egg is stored longer than a boiled one. Why it happens? The reason lies on the surface: for its intended purpose, an egg is an egg cell, a potential living organism. Therefore, nature has supplied it with proteins of the immune system that suppress pathogens.
In addition, the product contains a substance called avidin. It binds the important for the development of all organisms vitamin - biotin.
But heat destroys all these compounds, so boiled eggs become more vulnerable to microorganisms that penetrate the porous structure of the shell.
Therefore, it is the raw product that is best suited for long-term storage. Here are some more facts about storage conditions:
- Washed eggs are stored less - just a couple of weeks.
- Optimum moisture should be no higher than 85%.
- For storage it is best to put them with sharp ends down., positioning so that they do not touch.
- This product can be stored in the freezer. It will not spoil for a whole year, but, unfortunately, it will lose its taste and texture.
How can I store eggs
Within a few days they can be stored in the refrigerator (0-5 degrees), or in any other place at room temperature (20 degrees). By the way, that compartment on the refrigerator door, where manufacturers usually provide for a special container for them, is not the best place. It's too warm there, besides, inevitable temperature drops.
For many centuries, people have thought up many ways to maximize the shelf life of the product, if it is not possible to observe the temperature regime. For example:
- Brush with vegetable oil. This method is often used for Easter eggs, which the oil gives not only durability (about 7 days), but also a beautiful shine.
- Brush with egg white.
- Immerse in the solution of hydrated lime, diluted on the basis of the ratio of 300 grams per bucket. Such a radical measure allows you to keep them for six months, however, after this procedure, they acquire a not too pleasant taste.
In order that from favorite products and dishes there was only advantage, it is important to monitor the shelf life of the ingredients. You should not risk your health for nothing by consuming stale food.

Dietary shelf life
Free legal advice:
Depending on the type of bird, chicken, duck, goose, and turkey eggs are distinguished. The main products are chicken eggs. Waterfowl eggs are not used in public catering, as they may contain microorganisms harmful to the human body.
An egg is an asymmetrically-oval-shaped food product, topped with a shell on top, under which there is protein and yolk inside. This product is obtained from various breeds of domestic chickens due to their reproductive ability.
Currently, chicken farms from all over the world are engaged in the production of chicken eggs.
According to preferences, in some countries they prefer to breed breeds of chickens that carry white and light yellow eggs (in America and Russia they are considered better quality), or brown (in the UK).
In fact, the taste and nutritional properties of white and brown eggs are the same and their only difference is that the brown shell is slightly stronger and thicker, so they are more suitable for transportation.
Composition and calorie chicken eggs
One egg, about 100 grams, contains 76.15 grams of water, 12.56 grams of protein, 9.51 grams of fat, 2.5 grams of fiber, 1.06 grams of ash, 0.72 grams of carbohydrates.
Also, one egg contains a large set of vitamins, macro and microelements:
Free legal advice:
- vitamins - retinol (A), thiamine (B1), riboflavin (B2), niacin (PP or B3), choline (B4), pantothenic acid (B5), pyridoxine (B6), folic acid (B9), cyanocobalamin (B12 ), ascorbic acid (C), alpha-tocopherol (E), calciferol (D), phylloquinone (K),
- macronutrients - phosphorus, sodium, magnesium, potassium, calcium,
- trace elements - fluorine, zinc, selenium, copper, manganese, iron.
Calorie chicken eggs is about 143 kcal per 100 g of product.
The protein portion of eggs includes proteins that are readily absorbed by the human body (10.8%).
Of the carbohydrates (0.9%), egg protein contains glucose, of mineral substances — sodium, potassium, calcium, iron, phosphorus, chlorine, sulfur, magnesium; iodine, zinc, lead, bromine, and manganese are found. Protein is poor in fats (0.03%), it contains vitamins B1, B2, B12.
Coagulation and compaction of the protein occurs at 60-65 ° C. Absorbed protein at 98%. The energy value of 100g of protein 47kkal. When whipping egg whites form a thick solid foam.
Free legal advice:
The yolk of eggs is rich in proteins (16.2%), containing all the necessary amino acids for humans. The yolk contains a lot of fat (32.6%), which has a low melting point, as it contains oleic, linoleic and other unsaturated fatty acids. Of the marginal acids are palmitic, stearic, etc.
The fat is in the yolk in the form of an emulsion. Of carbohydrates, it contains galactose and glucose (1.0%). Minerals are the same as in egg whites. The yolk contains vitamins A, D, B1, B2, B3 and PP. Of fat-like substances contain lecithin and cholesterol. Yolk digestibility is 96%. The energy value of 100g of yolk is 370kkal.
Due to the cholesterol content, egg consumption should be limited to cholecystitis, cirrhosis of the liver, and diseases associated with impaired function of the liver and biliary tract.
The benefits of chicken eggs
The egg contains more than one hundred useful substances, so that the main advantage of chicken eggs is that they can be used as ordinary food or for therapeutic nutrition. Egg white is the most valuable and effective type of protein that the body uses to "build" muscles. Even in milk and beef there is not so much nutrient enzyme as in a chicken egg.
Also, the use of chicken eggs is that it contains polyunsaturated fatty acids, which play an important role in the prevention of nervous and cardiovascular diseases, as well as selenium and carotene, which have antioxidant properties that improve skin condition, prevent cancer, and improve the functioning of the reproductive system.
Not only the eggs themselves are useful, but also the eggshell, since its composition contains a large number of micro and macro elements, the first place among which is calcium.
Free legal advice:
The composition of chicken eggs includes niacin, necessary for the formation of sex hormones and nutrition of the brain. And the yolk contains vitamin D, which promotes the absorption of calcium by the body and strengthen bone tissue.
Letsiin improves memory, is good for the liver and boosts mental abilities. Lutein, contained in the yolk, helps to avoid vision problems, and choline helps prevent cancer.
Hurt Chicken Eggs
The benefits of chicken eggs are enormous, but there are also harmful product parameters. The composition of chicken eggs contains saturated fats, so their regular use leads to an increase in blood cholesterol. And if you get carried away eating raw eggs, then there is a risk of becoming infected with salmonella.
Harm eggs can have on children, and cause them to become allergic, so you should limit their number in the diet.
Depending on the shelf life and quality, chicken food eggs are subdivided into dietary and table eggs. Dietary eggs include eggs whose shelf life does not exceed 7 days, and table eggs - whose shelf life does not exceed 25 days from the day of sorting, not counting the demolition, and eggs stored in refrigerators for no more than 120 days.
Dietary and table eggs, depending on the weight, are divided into three categories: selective, first and second in accordance with the requirements specified in the table.
Free legal advice:
Dietary eggs are marked with red, table eggs with blue paint. Eggs are stamped with a round stamp (as stated in GOST), but the eggs are labeled in each factory in their own way (both round stamps, and in the form of a picture, and in several lines). The stamp should indicate: for dietetic eggs, the category and sorting date (day, month), and for canteens, only the category is possible.
True, eggs are labeled only in poultry farms. Homemade chicken eggs are free from all classifications. Buyer buys this product at your own risk.
Состоит маркировка из букв и цифр, в которых скрывается информация о весе и возрасте продукта. So, for example, the letter "D" says that the egg is dietary, and the letter "C" - that the table egg.
The letter "B" implies that the egg is of the highest category and weighs more than 75 g, "O" is selected eggs with a weight, the number "1" stands on eggs of the first category with weight, "2" is the second category with weight, "3" on eggs of the third category with weight.
The most common are table eggs of the second category, that is, "C2".
A label is attached to the boxes indicating the name of the enterprise, type, egg category, sorting date, storage conditions and periods, nutritional information, caloric content of 100g of product.
Diet eggs are stored at a temperature not higher than 20 ° С and not lower than 0 ° С, table eggs are kept at a temperature not higher than 20 ° С, eggs are stored in refrigerators at a temperature from 0 to -2 ° С and at relative humidity of 85-88%. The content of food chicken eggs should not have extraneous odors.

What is the shelf life of eggs under different storage conditions?
One of the most common foods is regular chicken eggs. They are used not only as independent food.
Most of all they are involved in baking, as well as many recipes. Therefore, the question of their shelf life is quite relevant. Due to the nature of the product, it is rather difficult to establish its freshness in appearance.
Therefore, it is necessary to know the main aspects related to this issue.
Shelf life of raw eggs in the refrigerator
For raw chicken or quail eggs, shelf life depends on temperature conditions. At room temperature, this product should be consumed within a month. If the temperature is more than 25 degrees, then this period is reduced.
In the refrigerator, the time at which these foods can be eaten or used in cooking increases. Some even point to three months.
However, it should be borne in mind that it is not always possible to establish the exact date of reference. If the purchase was made at the store, then the date of packing is marked with markers.
In some cases, however, the expiration date is also affixed.
To test this product for suitability for use, it should be dipped in water. If you went to the bottom - it means fresh. If it surfaced, it is better to throw it away. According to how far it separates from the bottom and determine the degree of freshness. With quail even easier. Unlike chicken, they do not go out, and dry out. That is, in this case, determine the possibility of use by weight.
About the shelf life of natural honey is written in this article.
Shelf life of chicken eggs in the refrigerator
The shelf life of chicken eggs in the refrigerator can be divided into three main stages:
- within one week from the date when they were torn down, they can be eaten raw, this option is considered dietary,
- a period of up to three weeks is given to eat this product with a little heat treatment - make an omelette, cook soft-boiled or other similar options,
- up to one and a half months can be consumed with a high level of heat treatment.
In the refrigerator to store this product, both raw and cooked, should be separated from other food supplies. To do this, use a container that will not pass moisture, as well as odors. The following recommendations are also prescribed:
- The position should be pointed down,
- Do not allow the presence of cracks, such better to use immediately.
If it is not stored in the refrigerator, then a dry place with a relatively low temperature should be found for it.
Quail eggs storage
The shelf life of quail eggs in the refrigerator has a maximum of two months. However, even if the period is already ending, they are still relatively safe to use. This is due to the fact that, unlike chickens, they have lysozyme in their protein structure. This substance prevents the development of bacteria.
The answer to the question of how to check the freshness of quail eggs is also covered in this protein. If the development of bacteria occurs in chicken, which leads to the production of oxygen, due to which it emerges and goes dead, then there is no such process in the quail. The contents of the shell simply shrink over time. Accordingly, freshness can be determined by weight.
Shelf life of boiled eggs
The shelf life of boiled eggs, both quail and chicken, is significantly reduced. This happens due to the fact that the protective film is destroyed by thermal effects. As a result, the boiled product is much harder to tolerate temperature fluctuations, the influence of bacteria and the external environment.
This applies to both hard-boiled and soft-boiled. Therefore, this food should be consumed if possible in the shortest possible time.
Perhaps some readers will be interested in information about the shelf life of vodka.
Shelf life of boiled eggs in the refrigerator
Boiled eggs are stored in the refrigerator for up to a week. Here, however, storage conditions must also be considered. Close contact with the following products should be avoided:
- fish and smoked meats
- various citruses,
- mushrooms and matching dishes,
In the presence of their near quickly perceived not only smells. The process of decomposition of useful properties is also accelerated, which leads to spoilage of the cooked product. If you clean the shell, then you can store for eating no more than two days.
The shelf life of eggs at room temperature
At room temperature, the shelf life of eggs is somewhat lower. A maximum threshold of 25 degrees is agreed, if it is higher, then we can already speak about the beginning of the incubation period.
For such storage, you should choose the most cool and dry place. It is also necessary to take into account the presence of sunlight, it also has a negative effect. That is, in such a key it is rather difficult to choose a suitable place, because usually there where the humidity rises all the time is cool and even damp.
However, if these conditions were met, then you can count on the safety of the whole month. Some recommend taking into account only three weeks. In this case, the boiled product is stored for 24 hours.

How to find out the shelf life of eggs - egg storage conditions
For each food product is determined by the normal shelf life. It is during this time that its storage and subsequent use is recommended.
This applies in particular to fish, garlic, cheese, onions, pastries and all other products that can be eaten.
If their purchase was made at the store, then, as a rule, the proper shelf life is indicated on the outer packaging.
But in relation to eggs, especially domestic ones, this rule is far from always effective. Here, much depends on their type, and on storage conditions.
The shelf life of eggs according to GOST
Regardless of their type, the deadline in this case cannot exceed the fixed 30 days. It is during this time, even when stored in the refrigerator, they must be consumed. At room temperature, the term is reduced to exactly 10 days, and it concerns homemade chicken eggs, boiled and raw, quail, and all the rest.
For cooked species, separate requirements are established, depending on the method of preparation. If it is a store product, then there will be a lot of what kind was purchased:
Regarding the current GOST, it should be noted that it is subject to changes annually, but some products remain under the effect of imperative rules that have not changed for several years.
Shelf life of boiled eggs in the refrigerator
For such a variety, the maximum storage time is no more than 5 days (item 4). When cooked, the product loses a large number of basic elements that contribute to its long-term storage. In a refrigerator they can be stored for up to 8 days, provided that they have been pre-processed dairy products - sour cream or mayonnaise.
Accordingly, the limiting period is 5-8 days. This applies to the refrigerator at a temperature of at least minus 15 degrees.
After the expiration of this period, the most appropriate solution would be to get rid of an already expired product. The number of days is calculated from the date of purchase, as well as in accordance with information from the seller.
Therefore, the shelf life of chicken eggs will largely depend on the temperature.
How long can you keep a fresh egg in the fridge?
Returning to the indicated 4 point, it can be established that raw, at the proper temperature, they can be stored up to 30 days. In particular, this concerns the home option. As for the incubator variety, the date should be indicated immediately after sorting. But in any case, the maximum period should not exceed a fixed 15 days.
This rule does not apply to cases of special chemical treatment, increasing the storage period up to 50 days. But such products are manufactured with the obligatory indication of this information, and it is prohibited to hide or replace it. This applies to all chicken products.
What is the shelf life of quail eggs?
Similarly with chicken. This applies to the contents in the refrigerator or at the dining / room temperature. Accordingly, in the refrigerator it is not more than 30 days (at 15 degrees), at room temperature - not more than 10 days. In fresh or cooked form, homemade or incubator - there is no special value here.
Suitability in this case must be calculated from the time of sorting or from the moment they are received in a natural way. Information must be clarified in each case by the conditional seller.
The shelf life of raw eggs in the refrigerator, as already noted, is not more than 30 fixed days.
How to find out if the egg is fresh?
It is not difficult, using the extremely simple method.
It is enough to rub the product with your hand, and if the shell begins to peel off, or a grayish stain appears on it, it means that this product is not fresh.
To establish the suitability of rubbing it needs about 10 seconds. On a fresh product in this place should not appear any traces. You can also determine the proper suitability and smell.
If you have questions, consult a lawyer
You can ask your question in the form below, in the window of the online consultant in the bottom right of the screen or call the numbers (around the clock and seven days a week): (44,00 from 5)
How many boiled eggs are stored at room temperature and in the refrigerator
How many boiled eggs are stored in the refrigerator? Such a question often arises in people who like to cook products with a margin. Knowing the optimal food storage time is very important, otherwise you can cause significant harm to health.
How to boil an egg?
Most people love eggs. Of these, you can cook a lot of tasty and nutritious dishes, so the housewives often boil the poultry product in large quantities before the holiday, enough for different salads.
In such cases, the question often arises about the shelf life of boiled eggs, since the entire quantity of the product is not always possible to use completely. Therefore, it is important for housewives to know how many eggs can lie without spoiling.
Before turning to the question of the safety of the product, you need to know how to cook it properly. This is a simple matter, but some rules that few people know should still be followed.
Boil the eggs hard-boiled should be at least 7 minutes. It is such a heat treatment time that is enough to defeat many bacteria, even Salmonella, which is resistant to high temperatures.
Omelet lovers should also not forget about their safety. Cooking on the fire is necessary until such time as the egg mass dries. This will save the omelet from bacteria, if any. Of course, some prefer the liquid center in the fried eggs, but in this case, the danger of catching the infection is very high.
What affects the safety of eggs?
The shelf life of eggs depends on a number of factors, the main ones are:
- Freshness of the purchased product, storage conditions before cooking.
- Cooking eggs without cracks in the shell. If in the process of cooking on the shell cracks formed, then such an egg will not lie for a long time. To avoid trouble, it is recommended to immerse the product in water not immediately after being removed from the refrigerator, but after a few minutes. After lying at room temperature, the testicles are not likely to crack when cooked.
- Detailed inspection after preparation. The welded product must be carefully examined for cracks. Those testes, whose shell has lost its safety, should be eaten in the near future, they cannot be stored for a long time, as there is a risk of reproduction in them of harmful bacteria. The period for which to eat such a product is 4 days.
The shelf life of eggs will also vary depending on the time of their preparation.
How to keep boiled eggs and soft-boiled eggs?
How long can boiled eggs be stored? It all depends on where the person is planning to keep the product. The best option is to keep the testicles in the refrigerator, and the temperature should vary between + 2 ... + 4ºС.
After cooking, the product should be cooled in a cold liquid, then placed in a tight-fitting container. Such measures will prevent the testicles from absorbing extraneous odors, because their shell is porous, which means that it absorbs foreign flavors well. It is possible to store boiled eggs in the refrigerator in sealed containers for up to 14 days.
A poultry product that has undergone heat treatment may lie for some time at room temperature (not above + 20 ° C), storage in such conditions should not exceed 3 days.
The boiled and peeled product is not subject to long-term storage: the egg must be eaten within 12 hours, later it will become unsuitable for humans.
Some people prefer to cook soft-boiled eggs, with this method of cooking the product is subjected to heat treatment for no more than 3 minutes. Soft-boiled testicles have liquid yolk, so their shelf life is somewhat different from the product cooked hard-boiled.
A boiled egg has a shelf life of no longer than 48 hours, after eating it should not be eaten, the risk of poisoning is too great. Those who decide to keep the testicles at room temperature need to know that they will deteriorate after 24 hours.
How long can you keep Easter eggs?
On the bright holiday of Easter, people paint eggs, and more than one in ten. Eating all the preparations at once is very difficult, so it is important to know what the shelf life of boiled eggs in the refrigerator.
Of course, for those who paint eggs only by a few pieces, long-term storage is an irrelevant question, but still, most of Easter create real works of art, which are then eaten by the family with appetite.
Those who plan to keep Easter eggs for a long time, it is recommended to boil hard boiled eggs, soft-boiled for a long time will not lie. And in general, do not cook a lot of product, so as not to throw it away.
Shelf life of boiled eggs, painted for the holiday, at room temperature for not more than 4 days, in the fridge, eggs will lie for about a week. For those who wish to extend the storage time, it is recommended to cover the shells with oil.
Such a trick will not only make the testicles more attractive, but also contribute to the blockage of small pores, which will extend the shelf life.
Any boiled product has its own storage nuances, the testicles are no exception. Adhering to simple rules, you can extend the shelf life of your favorite foods. It is because of the rather long shelf life of boiled eggs that are often taken on the road.
The main thing is to choose whole specimens with whole shells, no chips or cracks. Otherwise, there is a risk that the food will spoil until the traveler decides to try it. If an unpleasant smell has started to come from the testicles, then they should be thrown away.
Poisoning is not so easy to treat, especially on the road. Do not expose health hazards.

3.2 table eggs: Eggs, the shelf life of which at a temperature of from 0 ° C to 20 ° C is not more than 25 days, and eggs, which were stored at a temperature from minus 2 ° C to 0 ° C for no more than 90 days.
3.3 washed eggs: Eggs treated with special detergents authorized for use by authorized bodies in the prescribed manner.
3.4 insufficiently dense protein: Protein that, when poured onto a smooth surface, spreads slightly.
3.5 slightly yolk: Visible, slightly flattened, mobile yolk.
Tips for choosing
The marking will tell you how much the egg is already stored and to what date it should be used. It is difficult to find a product with the mark "D" (dietary), it was born no more than 7 days ago. They bring the product to the supermarkets from afar, usually these days they are on the way. More common table eggs marked "C", he is from 7 to 25 days. For more accurate dates, be sure to look at the packaging itself.
Marking includes not only a letter, but also a number or an additional symbol. The marks “B” and “O” mean that eggs belong to the highest and selective categories. Such products are the largest in size. Others are divided into categories from 1 to 4, from larger to smaller. The size is affected by the age of the chicken: the older the bird, the larger the egg that was laid.
For the preparation, it is recommended to use products labeled "C1". They have an average weight and the most balanced composition. It makes no sense to chase large ones, they just have more liquid.
Do not pay attention to the color of the shell. Hue depends solely on the breed of bird and does not affect the taste. Dark eggs have a stronger shell. If you are going to take the product home in public transport, then choose the brown shell, so it is safer.
You can determine the freshness right in the store. Remove one egg from the package and slightly shake: the yolk of the fresh egg does not move inside the shell. The shell should ideally be matte and rough. Glossy gloss on a smooth surface - a good reason to refuse to buy.
Dirt on the eggs will tell you a lot. A small amount of straw or smudges is permissible, but if the egg is completely dirty, then it is worth looking for a product of better quality. Dirty eggs are most often the result of poor bird conditions, and, accordingly, the products themselves will not be of very high quality.
A food egg in a store is stored in accordance with established rules and technical regulations. But the conditions in which you will keep the product after purchase, also affect the quality. A raw egg can be stored for 25-30 days in the refrigerator, and without it - 14-20 days. It is important to consider that the cracked egg is better to use immediately. Microbes get under the shell, and the product becomes a threat to health.
The shelf life of chicken eggs is indicated on the packaging. Be sure to study the eggs to understand how long they stand on the counter. Remember that proper storage of the product will protect you from food poisoning and other unpleasant consequences.
In a refrigerator
The best temperature for egg storage is 0-2 ° C. Do not put the product on the door of the refrigerator, as many are accustomed to. Constant exposure to warm air when opening the door will shorten the shelf life of the eggs. You should not put the egg tray and to the source of cold in the refrigerator - eggs can freeze through, it will have a bad effect on the condition of the product.
Raw eggs can be kept no more than 28 days, but it is better to immediately pay attention to the date on the package. If the egg is broken, then it should be consumed within 24 hours. A hard-boiled product lasts no more than a week. If you want to double this period, cook soft-boiled eggs.
Sometimes eggs are boiled for salad, peeled from the shell, but they are not put into the dish. This ingredient can be sent to the refrigerator for 72 hours. Eggs in thermofilm (Easter decoration) can be eaten for 2 more days after preparation.
The storage of eggs is determined by certain standards, which are specified in clause 8.2 of GOST R 52121-2003. The permissible temperature range is from 0 to 20 ° C. Of great importance is humidity, it should be in the range of 85-88%. Under such conditions, eggs can be stored no more than 3 months. Terms depend on the category of eggs.
- Dietary product can stand for 7 days, not more.
- Table eggs are stored in suitable conditions for up to 25 days.
- If the eggs are washed, then only 12 days are usable.
On industrial production eggs there are always two dates. One of them will report when the egg was born. The second date limits the period of consumption of the food product.
If for some reason it is not possible to store the product in the refrigerator, it can be left at room temperature for some time, but certain rules must be followed. Do not place egg trays near batteries, heaters, or other electrical appliances. When interacting with the warm air, the eggs quickly become rotten. In the warmer months, you should find a cooler place to maintain freshness longer. The best option in this case would be a basement or cellar.
Maintain a stable temperature of up to 20 ° C. Sharp drops will harm the food product. At home, you can build a wooden box and put in it a small cold battery.
In a warehouse environment, storage is perfectly acceptable if the temperature there does not exceed 20 ° C. The warehouse must be cold and dry. Make sure that the humidity does not exceed 80%. Store the product in such conditions can be 14-25 days. It is better to lay eggs in a container at a distance from each other so that they do not touch.
Do not leave food near sources of heat or cold - in both cases the quality of eggs will deteriorate. In stock, it is worthwhile to place trays only on stands or on special racks, but not to put them directly on the floor.
Is it possible to freeze?
In most cases, there is enough refrigerator for egg storage. Sometimes after cooking, there are yolks that you want to leave for the future. Some hostesses prefer to freeze the product for the winter, and this can be done if you know certain rules.
Keeping eggs in the freezer in the freezer is a bad idea. The shell will simply crack due to internal pressure, as the protein contains water and expands when it freezes. The yolk will turn into a jelly-like mass immediately after thawing and will be useless for preparing most dishes.
However, freezing methods exist, and eggs in the freezer can be stored from 2 months to 1 year. Protein with yolk can be frozen according to the technology below.
- Carefully and with quick motion, break the shell and pour the contents into a suitable container. Fork mix the protein with the yolk, but try not to let in a lot of air.
- After defrosting, the structure of the egg may change, grit appears. To avoid this, you need to add to the mass 0.5 tsp. salt or 2 tsp. liquid honey, sugar. Choose an additional component depending on the intended use of the mixture.
- Stir the egg mass gently again. You can use a sieve to remove the pieces of the shell.
- Pour the mixture into a clean storage container. When choosing the size of the container, please note that the product will increase in size.
- Stick the sticker on the container. Be sure to record the date when the freeze began. It will be useful to indicate the number of eggs and additional components (salt, sugar).
After cooking, only proteins or yolks can remain. They will not stand in the refrigerator for a long time, but in the freezer they can be stored for more than 60 days. Act like this:
- Separate the yolks from the proteins, place in different containers.
- To yolks need to add salt or sugar. To freeze 1 cup you need to take 0.5 tsp. salt or 1 tbsp. l sugar (corn syrup or liquid honey).
- Smash the protein with a fork. Act carefully to prevent air from entering. If you carefully stir does not come out, then pass the product through a fine sieve.
- Both parts need to be frozen in clean containers. Do not pour too much mass, it will increase during the freezing. You can first freeze the mass in ice forms, and then put it in a clean container with an airtight lid. Do not forget to sign the capacity.
Sometimes you need to cook hard boiled eggs for a salad or other dish. If the ingredients were calculated incorrectly, then an extra product remains. You can safely freeze the boiled yolks in this way:
- Carefully remove the yolk from the protein. The latter should not be frozen, since its consistency will deteriorate badly. Boiled proteins after defrosting can not be eaten.
- Fold the yolks to the bottom of a suitable saucepan. Pour the water so that it covers the contents of 3 cm.
- Wait for boiling and cover the container with a lid. Boil 15 minutes, turn off the gas.
- Pull the yolks out of the pan, pat dry. Fold the product in a suitable container with a lid. Put in the freezer and store there for about 60 days. Be sure to sign the container so as not to miss the deadline for use.
