3 Definitions
In this standard, the following terms are used with the corresponding definitions:

Tips for choosing
The marking will tell you how much the egg is already stored and to what date it should be used. It is difficult to find a product with the mark "D" (dietary), it was born no more than 7 days ago. They bring the product to the supermarkets from afar, usually these days they are on the way. More common table eggs marked "C", he is from 7 to 25 days. For more accurate dates, be sure to look at the packaging itself.
Marking includes not only a letter, but also a number or an additional symbol. The marks “B” and “O” mean that eggs belong to the highest and selective categories. Such products are the largest in size. Others are divided into categories from 1 to 4, from larger to smaller. The size is affected by the age of the chicken: the older the bird, the larger the egg that was laid.
For the preparation, it is recommended to use products labeled "C1". They have an average weight and the most balanced composition. It makes no sense to chase large ones, they just have more liquid.
Do not pay attention to the color of the shell. Hue depends solely on the breed of bird and does not affect the taste. Dark eggs have a stronger shell. If you are going to take the product home in public transport, then choose the brown shell, so it is safer.
You can determine the freshness right in the store. Remove one egg from the package and slightly shake: the yolk of the fresh egg does not move inside the shell. The shell should ideally be matte and rough. Glossy gloss on a smooth surface - a good reason to refuse to buy.
Dirt on the eggs will tell you a lot. A small amount of straw or smudges is permissible, but if the egg is completely dirty, then it is worth looking for a product of better quality. Storage time

The storage of eggs is determined by certain standards, which are specified in clause 8.2 of GOST R 52121-2003. The permissible temperature range is from 0 to 20 ° C. Of great importance is humidity, it should be in the range of 85-88%. Under such conditions, eggs can be stored no more than 3 months. Terms depend on the category of eggs.

At home
If for some reason it is not possible to store the product in the refrigerator, it can be left at room temperature for some time, but certain rules must be followed. Do not place egg trays near batteries, heaters, or other electrical appliances. When interacting with the warm air, the eggs quickly become rotten. In the warmer months, you should find a cooler place to maintain freshness longer. The best option in this case would be a basement or cellar.

In a warehouse environment, storage is perfectly acceptable if the temperature there does not exceed 20 ° C. The warehouse must be cold and dry. Make sure that the humidity does not exceed 80%. Store the product in such conditions can be 14-25 days. It is better to lay eggs in a container at a distance from each other so that they do not touch.
Do not leave food near sources of heat or cold - in both cases the quality of eggs will deteriorate. In stock, it is worthwhile to place trays only on stands or on special racks, but not to put them directly on the floor.
Is it possible to freeze?
In most cases, there is enough refrigerator for egg storage. Sometimes after cooking, there are yolks that you want to leave for the future. Some hostesses prefer to freeze the product for the winter, and this can be done if you know certain rules.
Keeping eggs in the freezer in the freezer is a bad idea. The shell will simply crack due to internal pressure, as the protein contains water and expands when it freezes. The yolk will turn into a jelly-like mass immediately after thawing and will be useless for preparing most dishes.

After cooking, only proteins or yolks can remain. They will not stand in the refrigerator for a long time, but in the freezer they can be stored for more than 60 days. Act like this:
- Separate the yolks from the proteins, place in different containers.
- To yolks need to add salt or sugar. To freeze 1 cup you need to take 0.5 tsp. salt or 1 tbsp. l sugar (corn syrup or liquid honey).
